Who doesn’t love cake? Chocolate cake, swiss frosting, cream cheese frosting, French vanilla flavour, Lamon cake, fruit cake, or plain almond cake. The list is never ending, so are the combination of flavours, icing or frosting.. Then now a days there are shape, theme, grandeur in the name of expensive art being charged on this soft, moist loafs of flour, egg and butter.. But why am I talking about all these?? Nothing.. juts thought of starting today’s blog with some interesting verity!! If you like cakes.. you won’t mind with this introduction.. right? Don’t give that quizzical look, anyway I can’t see it!!
Coming to serious point now.. I love cake, I love to bake cake for close to an hour, where the kitchen smells so divine, fingers still have some scent left of the butterscotch or vanilla butter essence, or the sensuous whiff of unsweetened dark coco!! Oh it’s celestial!! Nothing in this world can beat these smells!!
Now let me contradict a little here. So I love baking, but my indolent self doesn’t want to beat, whip and gently fold egg, butter, flour respectively every now and then, so I don’t want to eat cake every alternative day!! NOOO.. I can’t do that.. I have an obvious trick to satisfy my wolfish sweet crave. Now don’t make me blush by saying ‘Sooo Sweeett!!’ 😉
So MUG Cake it is, and it is super easy to make, super delicious in taste, and I got the Super Healthy part covered too. The best part of mug cake is you can get experimental, you can be little daring and hardly those efforts will fail.. you can play with flavours, ingredients, you don’t need to sit with the weight machine to measure the exact quantity. This is the ‘hurry-up-time’ snack.
I am sharing about 4 different variation I have tried so far, I was A+ in all of them.. Am I bragging, that’s not needed.. it works, you just have to try.
1. Let’s start with the easy peasy one… Chocolate Mug cake:
1/2 ripe banana + 2 table spoon wheat flour + 1-2 table spoon oil+ Coconut sugar/ jaggery powder/ Honey 2 table spoon or as per your taste + baking powder 1/2 teaspoon+ Baking soda 1 pinch (optional) + vanilla essence 1/2 teaspoon + Milk 5-6 tablespoon (may need more)
Mix them very well in the ramekin or small bowl or coffee mug whichever you prefer, put the mug in Micro wave for 1:30 minutes to 2 minutes. And your cake is ready.
2. Semolina Mug Cake:
1/2 ripe banana + 2 Table spoon Semolina+ 1-2 table spoon oil+ Coconut sugar/ jaggery powder 2 table spoon or as per your taste + baking powder 1/2 teaspoon+ Baking soda 1 pinch (optional) + vanilla essence 1/2 teaspoon + Milk 7-8 tablespoon (may need more) + few roasted peanuts whole or chopped
Mix them very well in the ramekin or small bowl or coffee mug whichever you prefer, put the mug in Micro wave for 1:30 minutes to 2 minutes. And it’s done.
3. Semolina & Coffee Mug Cake
1 table spoon wheat flour + 1 table spoon semolina + 1-2 table spoon oil+ Coconut sugar/ jaggery powder 2 table spoon or as per your taste + baking powder 1/2 teaspoon+ Baking soda 1 pinch (optional) + vanilla essence 1/2 teaspoon + 1 teaspoon coffee powder+ Milk 6-8 table spoon (may need more) + few roasted whole peanuts
Mix them very well in the ramekin or small bowl or coffee mug whichever you prefer, put the mug in Micro wave for 1:30 minutes to 2 minutes. And it’s ready to eat..

4. Coffee & Peanut Butter Mug Cake
This has been My Faavouriteee!!!
1/2 ripe banana + 2 table spoon Oat flour (you may use whole oats) + 1 table spoon oil+ Coconut sugar/ jaggery powder 2 table spoon or as per your taste + baking powder 1/2 teaspoon+ Baking soda 1 pinch (optional) + vanilla essence 1/2 teaspoon + Milk 6-8 table spoon (may need more) + coffee powder 1 teaspoon + home made Peanut butter 2 whole table spoon + few choco chips or saved chocolate
Mix them very well in the ramekin or small bowl or coffee mug whichever you prefer, put the mug in Micro wave for 1:30 minutes to 2 minutes. Hope you are ready with a spoon now!
***NOTE:
- Keep the mixture little runny, in comparison to normal cake batter.
- one of the reasons would be, you are baking it in Micro mode, so the moisture is soaked quickly.
- if you keep it very runny (in case), you may keep it little more in micro, if you are not happy with the consistency of the first baking or the gooey consistency.
- Use full Micro mode or 100% mode.
- if you are using Choco chips, they may go down to the bottom of the ramekin while baking, quote them with flour before mixing with the batter.
